Winter Warmer Dairy-Free Vegetable Soup Recipe

Winter Warmer Dairy-Free Vegetable Soup Recipe with a homemade broth alternative.

This vegetable soup is delicious and nutritious for the whole family to enjoy! This diverse selection of vegetables is excellent for your gut microbiome, enhancing your immunity and overall well-being.

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 3 carrots, chopped / grated
  • 2 celery stalks, chopped / grated
  • 2 potatoes, diced / grated
  • 1 cup butternut squash, cubed / grated
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • ½ tsp smoked paprika
  • 4 – 5 cups homemade broth* (see recipe below)
  • 1 can diced tomatoes / 2 fresh tomatoes, peeled and diced
  • 1 cup chopped spinach (optional)
  • Salt and black pepper, to taste

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until fragrant.
  2. Add carrots, celery, potatoes, and butternut squash. Cook for 5 minutes.
  3. Stir in thyme, oregano, and smoked paprika.
  4. Pour in homemade broth* and diced tomatoes. Bring to a boil, then reduce heat and simmer for 50 – 60 minutes. Stir in-between.
  5. Add spinach (optional) and cook for another 5 minutes.
  6. Season with salt and black pepper. Serve warm and enjoy!

 

*Homemade Dairy-Free Broth Alternative

Ingredients:

  • 5 cups water
  • 1 onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, smashed
  • 1 bay leaf
  • 1 tsp dried thyme
  • ½ tsp smoked paprika
  • Salt and black pepper, to taste

Instructions:

  1. Add all ingredients to a pot and bring to a boil.
  2. Reduce heat and simmer for 30 minutes.
  3. Strain and use the broth in your soup.
