Earth Day Recipe
“Clean Earth Nourish Bowl”
A simple, whole food meal using fresh, minimally processed ingredients to support gut health and reduce exposure to unwanted chemicals.
Free from: Gluten, wheat, dairy, egg, peanut, tree nut, soya.
Ingredients
Serves 4
Base
- 1 cup quinoa or brown rice
- 2 cups filtered water
Roasted vegetables
- 2 sweet potatoes, cubed
- 2 carrots, sliced
- 1 zucchini, chopped
- 1 tablespoon olive oil
- Pinch of salt
Fresh toppings
- 1 avocado, sliced
- 1 cup cucumber, chopped
- Handful fresh spinach or rocket
- 2 tablespoons pumpkin seeds or sunflower seeds
Simple dressing
- 3 tablespoons olive oil
- Juice of 1 lemon
- 1 teaspoon honey or maple syrup
- Pinch of salt
Method
- Rinse quinoa or rice thoroughly and cook in filtered water until fluffy.
- Preheat oven to 180°C.
- Toss vegetables in olive oil and roast for 25 to 30 minutes until tender.
- Prepare dressing by mixing all ingredients in a small bowl.
- Assemble bowls with grains, roasted vegetables, and fresh toppings.
- Drizzle dressing over just before serving.
