Earth Day Recipe

“Clean Earth Nourish Bowl”

A simple, whole food meal using fresh, minimally processed ingredients to support gut health and reduce exposure to unwanted chemicals.

Free from:  Gluten, wheat, dairy, egg, peanut, tree nut, soya.

Ingredients

Serves 4

Base

  • 1 cup quinoa or brown rice
  • 2 cups filtered water

Roasted vegetables

  • 2 sweet potatoes, cubed
  • 2 carrots, sliced
  • 1 zucchini, chopped
  • 1 tablespoon olive oil
  • Pinch of salt

Fresh toppings

  • 1 avocado, sliced
  • 1 cup cucumber, chopped
  • Handful fresh spinach or rocket
  • 2 tablespoons pumpkin seeds or sunflower seeds

Simple dressing

  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • 1 teaspoon honey or maple syrup
  • Pinch of salt

Method

  1. Rinse quinoa or rice thoroughly and cook in filtered water until fluffy.
  2. Preheat oven to 180°C.
  3. Toss vegetables in olive oil and roast for 25 to 30 minutes until tender.
  4. Prepare dressing by mixing all ingredients in a small bowl.
  5. Assemble bowls with grains, roasted vegetables, and fresh toppings.
  6. Drizzle dressing over just before serving.
