Looking for comfort food? This hearty curry will not disappoint. It is packed with flavor. The delicious and creamy gravy will have your kids asking for seconds. Serve this on a bed of fragrant basmati rice, with rotis, or with regular bread.
Ingredients
Marinade:
- 1 teaspoon salt
- 1 teaspoon fine cumin powder
- 1 teaspoon fine coriander powder
- ½ teaspoon turmeric powder
- 1 tablespoon lemon juice to make a paste
Other ingredients:
- 1 tablespoon vegetable oil
- 1 chicken cut into pieces, skin removed and washed
- 2 tomatoes (liquidised)
- 4 tablespoon Orley Whip
- 1 teaspoon ground ginger and garlic paste
- 1 teaspoon fine coriander powder
- 1 teaspoon fine cumin powder
- 1 teaspoon garam masala
- 1 tin coconut milk (400ml)
- Chopped coriander for garnish
METHOD:
- Marinate chicken overnight or for few hours using the marinade ingredients.
- Heat the oil in a pot and cook over medium heat until the chicken is cooked through.
- In a saucepan, place the liquidized tomatoes, Orley Whip, ginger and garlic paste, coriander powder, and cumin powder. Leave to simmer.
- Thereafter pour the sauce over the chicken and cook further.
- Lastly add coconut milk, garam masala and freshly chopped coriander.
