Crustless Spinach Quiche

This crustless spinach quiche is a simple and delicious dish, perfect for brunch, lunch, or a light dinner. With no pastry, it’s naturally gluten-free and can be adapted to suit different dietary needs. Serve it warm with a fresh salad for a wholesome meal.

Ingredients

  • 1 cup chopped onion
  • 1 cup sliced fresh mushrooms
  • 1 tablespoon cooking olive or canola oil
  • 1 packet (300g) frozen chopped spinach, thawed and well drained
  • 2/3 cup (about 100g) finely chopped cooked ham
  • 5 large eggs
  • 3 cups (about 360g) grated white cheddar or gouda or mozzarella cheese (for lactose-sensitive, use lactose-free cheese or a dairy-free alternative)
  • 1/8 teaspoon black pepper

Method

  1. Preheat the oven to 180°C and grease a 23cm pie dish.
  2. Heat the oil in a large pan over medium heat. Sauté the onion and mushrooms until soft.
  3. Stir in the spinach and ham, cooking until any extra moisture has evaporated. Remove from heat and allow to cool slightly.
  4. In a bowl, beat the eggs, then mix in the grated cheese (or dairy-free alternative).
  5. Add the spinach mixture and season with black pepper. Stir well to combine.
  6. Pour into the prepared dish and spread evenly.
  7. Bake for 40-45 minutes, or until the center is set and a knife inserted comes out clean.
  8. Let it rest for a few minutes before slicing and serving.

Substitutions for Dietary Needs

🌱 Vegetarian? Swap ham for sun-dried tomatoes or extra mushrooms.
🧀 Dairy-Free? Use a plant-based cheese alternative.
🥚 Egg Allergy? Try an egg replacement such as a that made from flax, chickpea flour or aquafaba (though results may vary).
