Ingredients
- 1 cup chopped onion
- 1 cup sliced fresh mushrooms
- 1 tablespoon cooking olive or canola oil
- 1 packet (300g) frozen chopped spinach, thawed and well drained
- 2/3 cup (about 100g) finely chopped cooked ham
- 5 large eggs
- 3 cups (about 360g) grated white cheddar or gouda or mozzarella cheese (for lactose-sensitive, use lactose-free cheese or a dairy-free alternative)
- 1/8 teaspoon black pepper
Method
- Preheat the oven to 180°C and grease a 23cm pie dish.
- Heat the oil in a large pan over medium heat. Sauté the onion and mushrooms until soft.
- Stir in the spinach and ham, cooking until any extra moisture has evaporated. Remove from heat and allow to cool slightly.
- In a bowl, beat the eggs, then mix in the grated cheese (or dairy-free alternative).
- Add the spinach mixture and season with black pepper. Stir well to combine.
- Pour into the prepared dish and spread evenly.
- Bake for 40-45 minutes, or until the center is set and a knife inserted comes out clean.
- Let it rest for a few minutes before slicing and serving.
