The lentil is one of the oldest and hardiest foods. There is no legume more resistant to arid lands than the lentil. It needs very little water to grow and can survive the coldest of climates.

Archaeologists also discovered traces of lentils buried with the dead in Egyptian pyramids. The humble lentil had by this time already reached mythical status and was praised for its ability to enlighten the mind, even in the afterlife.

Great for casual dining, and getting the kids fed in the most deliciously nutritious way. It’s a win win.
2 cans of diced tomatoes
1 can red kidney beans (any beans will work though)
2 cups veg stock
1⁄4 cup fresh or dried herbs (rosemary, parsley, oregano)
2 garlic cloves
4 spring onions
1 teaspoon canola oil
1⁄2 teaspoon salt and black pepper
3 cups of spinach
1 tablespoon tomato paste
Fresh or dried chilli (optional)
1 bag Happy Earth People red lentil pasta
Sauté spring onions and garlic in canola oil.
Bring tomatoes, kidney beans, stock, herbs, tomato paste and seasoning to the boil in large saucepan over medium heat for about 10 minutes
Add pasta, stir, turn heat to low, and cover.
Stir frequently until pasta is tender 7-8 minutes.
Turn off heat and add spinach to wilt and fold into the pasta mixture.
Sprinkle with chilli if desired.
