Looking for comfort food? This hearty curry will not disappoint. It is packed with flavor. The delicious and creamy gravy will have your kids asking for seconds. Serve this on a bed of fragrant basmati rice, with rotis, or with regular bread.

Ingredients

Marinade:

  • 1 teaspoon salt
  • 1 teaspoon fine cumin powder
  • 1 teaspoon fine coriander powder
  • ½ teaspoon turmeric powder
  • 1 tablespoon lemon juice to make a paste

Other ingredients:

  • 1 tablespoon vegetable oil
  • 1 chicken cut into pieces, skin removed and washed
  • 2 tomatoes (liquidised)
  • 4 tablespoon Orley Whip
  • 1 teaspoon ground ginger and garlic paste
  • 1 teaspoon fine coriander powder
  • 1 teaspoon fine cumin powder
  • 1 teaspoon garam masala
  • 1 tin coconut milk (400ml)
  • Chopped coriander for garnish

METHOD:

  1. Marinate chicken overnight or for few hours using the marinade ingredients.
  2. Heat the oil in a pot and cook over medium heat until the chicken is cooked through.
  3. In a saucepan, place the liquidized tomatoes, Orley Whip, ginger and garlic paste, coriander powder, and cumin powder. Leave to simmer.
  4. Thereafter pour the sauce over the chicken and cook further.
  5. Lastly add coconut milk, garam masala and freshly chopped coriander.
