Egg free and dairy free

When the banana bread craze of hard lockdown hit, we found this amazing recipe and had to try it. It became a weekly staple in our household and would get gobbled up within a couple of days.

This recipe is originally for banana bread, but bakes well as a muffin. It is a great snack for kids and freezes really well.

Ingredients

  • 2 cups flour
  • 1 ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup sugar
  • ¼ cup oil
  • 4 mashed bananas
  • ¼ cup water
  • 1 teaspoon vanilla

METHOD:

  1. Turn oven on to 180C
  2. Combine flour, baking soda and salt (mixture 1)
  3. In separate bowl – whisk sugar and oil (mixture 2)
  4. Add mashed bananas to mixture 2
  5. Add water and vanilla to mixture 2 while continuously stirring
  6. Add flour mixture 1 to mixture 2
  7. Spray/oil baking pan
  8. If baking as a bread – add mixture to bread pan and bake for 45 – 50 minutes
  9. If baking as muffins – add mixture to muffin pan and bake for 20 minutes or until done
